Joel Fuhrman, M.D., is a board-certified family physician, NYew York Times best-selling author and nutritional researcher who specializes in preventing and reversing disease through nutritional and natural methods. He is an internationally recognized expert on nutrition and natural healing, and has appeared on hundreds of radio and television shows including The Dr. Oz Show, the Today Show, Good Morning America, and Live with Kelly. 2 Carrots cut into large chunks
2 Bell Peppers cut into large chunks
1 Zucchini cut into large chunks
4 Mushrooms (any kind) cut into large chunks
1 whole onion (any size, any color) Diced
1 cup lentils (any color)
1 can Tomato Paste
Combine in large pot with 3-5 cups of water
Add Garlic Powder
Bring to boil on high heat uncovered
When you reach boiling give a good stir and cover then reduce to just below medium heat. Cook for at least 45 minutes stirring often. Soup is ready when Lentils and carrots are soft when poked with a fork.
