OKOY 1 bag of sprouted mung beans MONGO 35 pesos ¼ kilo or 250 grams small shrimp 75 2 white medium onion, sliced 10 Ratio for the batter: *I used 3 times of this 1 cup of flour 15 1 teaspoon baking powder 1 teaspoon cornstarch 1 teaspoon pepper 1/2 teaspoon salt 20 1 cup + 2 tablespoon of water * make adjustment if needed orange food coloring 5 cooking oil 40 *PRICE IS AS OF JULY 2018 1. Prepare the shrimp but cutting the pointed tip on its head. 2. Wash and let the mung beans drain. 3. Preheat pan with cooking oil. 4. Combine all the ingredients for the batter. 5. Layer the ingredients, first the mung beans then the sliced onion and the shrimp. 6. Pour enough amount of the batter wait until it sank in the bottom and then fry. 7. Make a dipping sauce of your choice just be sure to add freshly chopped garlic. 8. Serve and Enjoy! Empanada Filling Ingredients: 250g-300g ground meat(pork/beef/chicken) 2 small sized potatoes, diced 1 med sized carrots, diced 4 cloves garlic, minced 1 med sized onion, minced 1/2 cup sweet skinless longganisa, diced 100g green peas 1/4 cup raisins 1-2 tbso soy sauce 30g oyster sauce(more if needed)optional salt and pepper to taste sugar to taste 1 cup water 2-3 boiled eggs, sliced cooking oil for deep fry Dough ingredients: 2 cups all purpose flour 1/2 cup butter/margarine, softened but still cold (unsalted) ubed 1/8 tsp salt 7 tbsp very cold water Filling Procedure: 1) Saute onion and garlic 2) Saute ground pork until light brown 3) Add sweet skinless longganisa, potatoes and carrots 4) Add water. Cover and simmer for 3 minutes 5) Add green peas, soy sauce, oyster sauce, salt,pepper and sugar. Mix well 6) Simmer until the liquid is almost dry 7) Add raisins and mix well 8) Set aside and let it cool Dough Procedure: 1) Combine all purpose flour and salt. Mix well 2) Add cold butter. Using a fork cut the butter into the flour mixture 3) Add cold water a tablespoon at a time. Okoy or Ukoy (shrimp fritters) is a native Filipino food. It is a popular afternoon snack in the country, though some use it as viand for regular meals.

2 medium sweet potato, finely julienne
2 medium carrots, finely julienne
1 cup coriander sprigs
3 tbsp onion leeks, chopped
1 red onion, sliced
1 tsp fish sauce
250g fresh prawns, peeled or not
1/2 cup dried shrimps
1 cup cornstarch plus more more dusting
1/4 cup + 2 tbsp soda
pepper to taste
