In a large pot, place the chicken and fill with enough water to cover it, about 8 cups. Add 1/2 teaspoon of salt. Over medium to low heat, bring to a slow boil and cook for 20 minutes. 2. Reduce heat to low. Add the celery, carrots, onion, garlic, potatoes, cabbage, bay leaves, cilantro, and another 1/2 teaspoon of salt. Add more hot water to cover the ingredients if necessary. Carefully stir together to mix. Continue to cook for 45-60 minutes or until the chicken is cooked through and all the vegetables are soft. Add the cooked corn on the cob on the last 10 minutes of cooking. How to cook Beef Rib Soup Recipe / Caldo de Costilla de res. A very good soup recipe. 5 1/2 to 6 pounds of Beef Short Ribs 1 Medium Onion 4 Cloves Garlic 4 Bay Leaves Salt and Pepper Potatoes Carrots Cabbage Green Beans Chayote Squash Green Squash Corn 2 teaspoons Mexican Oregano Boil ribs in water for 15 to 30 minutes. Pour off the water, wash the ribs and the pot. Return bones to pot cover with water and simmer with onion, Garlic, bay leaves salt and pepper until tender. Skim off fat and scum. Add potatoes and carrots and cook until just tender, then add the cabbage. Cook a few minutes then add the other veggies and Oregano. Check seasoning before serving and adjust salt and pepper as needed. 2 tablespoon sunflower oil
4 cloves garlic crushed coarsely
2 carrots in large chunks
2 celery stalks diced coarsely
1 onion cut length wise
2 green bell peppers cut length wise
1 cup salsa
1 avocado diced
Half cup cilantro coarsely chopped
1 tsp salt
1 tsp garlic powder
¼ tsp black pepper
5 cups water
In large pan, add oil and garlic. Sauté until slightly brown.
Add carrots and celery sauté, until slightly softened.
Add bell peppers and onion.
Add salt, pepper, garlic powder sauté for 1 min.
Add water. Mix in salsa.
Allow to come to rolling boil. Squeeze in one lime.
Sprinkle in cilantro.
Plate and garnish with avocado.
